What is TSG?

The name “Jamón Serrano” is recognized as a Traditional Speciality Guaranteed product (TSG) by the European Union since 2000. The TSG designation protects the exclusive production method for and quality of this product – hams cured by European companies which are not duly certified may not use the name “Jamon Serrano” (Serrano Ham) to mark their hams.

The Difference Between Consorcio Serrano Ham and Iberico Ham

In Spain there are two very distinct types of cured ham which is based on the breed of the pig:

- from the Iberian pig (Iberico) 10% of overall ham production
- el jamón cured from the White pig (Serrano) 90% of overall ham production
